The Salad Works

If you know me, or have read this blog before, you know that I am not very good in the kitchen.  The warm weather is here though and Spring and Summer call for salads.  Since my husband, the chef in the house, hardly eats vegetables, the only way I can get a salad is if I make it myself.  N has apparently inherited his dad’s palate as I cannot remember the last vegetable I saw him eat.  So in order to satisfy my veggie cravings, set a good example for N, and hope that this baby girl develops healthier eating habits, I took to the kitchen and began making salads.

Pinterest has fueled my salad frenzy with the flurry of salad photos pinned lately.  I grabbed a few ideas, bought a bushel of veggies at Whole Foods, and started chopping.  So far, I’ve really enjoyed the salads although I’m not sure I can keep up with all the fruit and veggies I bought as the solo consumer in the house.
